  • 4 oz Cream cheese or sour cream Can substitute Greek yogurt for a lighter option.
  • 1 tsp Salt
  • 1 tsp Pepper

Chimichangas Assembly

  • 4 pieces Flour tortillas Can use corn tortillas, but warm them first.
  • 2 cups Cheese (cheddar or mozzarella), shredded Experiment with different cheeses like pepper jack.
  • 2 tbsp Olive oil or butter Ensure oil is hot for crispy texture.

Optional Toppings

  • 1 cup Lettuce, chopped For topping.
  • 1 cup Tomatoes, diced For topping.

Instructions

Preparation

  • In a mixing bowl, combine the cooked beef, minced garlic, cream cheese (or sour cream), salt, and pepper. Mix well until everything is blended.
  • Lay one flour tortilla flat on a clean surface. Place a generous portion of the beef mixture in the center of the tortilla.
  • Top with shredded cheese and any optional toppings like lettuce or tomatoes.
  • Fold the sides of the tortilla in towards the center and then roll it up tightly, creating a wrap.

Cooking

  • Heat a skillet over medium heat and add olive oil or butter.
  • Place the rolled chimichangas seam-side down in the skillet. Cook until they are golden brown and crispy, then flip and repeat on the other side.

Serving

  • Serve hot with your favorite dipping sauce or toppings.

Notes

Ensure the oil is hot enough to achieve golden, crispy chimichangas. Don’t overfill to prevent spills when frying. Let cool slightly before serving.
