Instructions
Preparation
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
In a small bowl, combine the flour, baking soda, and salt. Stir them together and set aside.
Mixing
In a large bowl, using a mixer, beat the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
Break the eggs into the butter-sugar mixture one at a time. Mix well after each egg, then add the vanilla extract.
Gradually add the flour mixture to the wet ingredients. Mix until just combined to avoid over-mixing.
Fold in the chocolate chips and nuts, if using.
Baking
Use a cookie scoop or tablespoon to drop mounds of dough about 2 inches apart on the prepared baking sheets.
Bake the cookies for 10-12 minutes. They should be golden on the edges but still soft in the center.
Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
To keep your cookies fresh, store them in an airtight container. For longer storage, freeze the cookies in a freezer bag.
