In a skillet, heat a little oil over medium heat. Add the ground chicken, soy sauce, sesame oil, and chopped green onion. Cook until the chicken is browned and cooked through, about 6-8 minutes.
Make the Coleslaw
In a bowl, mix the coleslaw mix with hoisin sauce.
Assemble the Tacos
Lay out the wonton wrappers on a clean surface. Add a spoonful of the chicken mixture and a scoop of coleslaw on each wrapper.
Fold and Seal
Fold the wonton wrappers over the filling to create a pocket. Pinch the edges to seal well.
Fry the Wontons
Heat oil in a deep pan to about 350°F. Carefully add the sealed wontons in batches, frying until golden and crispy, about 2-3 minutes per side.
Drain and Serve
Remove the wontons with a slotted spoon and let them drain on paper towels. Garnish with fresh cilantro before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in an oven at 350°F for about 10 minutes.
