Instructions
Preparation
Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla, lemon zest, and lemon juice.
In another bowl, combine the flour and baking powder. Gradually add this mixture to the creamed mixture alternately with the milk, starting and ending with the flour mixture.
Divide the batter evenly between the prepared pans.
Baking
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
Making the Chantilly Cream
Whip the heavy cream with powdered sugar until soft peaks form.
Assembly
Once the cakes are completely cool, spread the Chantilly cream between the layers and on top of the cake.
Garnish with fresh lemon slices and mint. Slice and serve.
Notes
Keep the cake refrigerated to maintain freshness. Consume within 3-4 days for best taste and texture. Consider freezing the cake (without cream) for later enjoyment.
