In a skillet over medium heat, cook the sliced pancetta until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain excess fat.
Mixing Ingredients
In a large saucepan, combine the heavy cream and whole milk. Heat gently over medium heat until hot but not boiling.
In a separate bowl, whisk together the egg yolks and granulated sugar until pale and fluffy.
Gradually pour the hot cream mixture into the egg yolk mixture, whisking constantly, then stir in the vanilla extract.
Chop the crispy pancetta and fold it into the cream mixture along with any optional nuts.
Baking
Pour the mixture into the greased baking dish or ramekins. Place in a larger baking pan and fill it with water halfway up the sides of the baking dish.
Bake for 30-35 minutes or until set.
Cooling and Serving
Let the dessert cool at room temperature. Once cool, refrigerate for at least 2 hours before serving.
Serve chilled, garnished with fresh berries if desired.
Notes
This dessert pairs well with coffee, light fruit salad, vanilla ice cream, or drizzled caramel sauce. It can be made a day in advance for better flavor melding.
